Spring Salad Recipe
I love to eat fresh, crisp salads all year, but especially in the spring. It just feels like salad season after all of the warm soups and stews everyone has been eating all winter. Today I want to share one of my favorite spring salad recipes that always comes out great and is easy to make!
Spring Salad Recipe
Here are the ingredients you will need for your spring salad:
- Romaine Lettuce
- Baby Spinach
- Strawberries
- Raisins
- 1 Small Vidalia Onion (peel the onion and use a mandoline slicer to cut it paper-thin)
- Feta Cheese
- Pepita Seeds
- Spiced, Chopped Walnuts
- Grilled Chicken (optional)
A few tips for making your spring salad perfect:
The great thing about this salad is that you can customize it to fit your taste.
Swap out the lettuce if you like. Some people are big fans of the spring mix that comes prepackaged in the grocery store – it’s not my personal favorite, but it will work just fine for this salad if you love it. Don’t leave out the spinach, though, it’s good for you!
Swap the spiced walnuts for candied walnuts if you want more sweetness in your salad.
You can use your favorite dressing, or you can mix up extra virgin olive oil, lemon juice, honey, a little Dijon mustard, and bit of salt and pepper for a quick and delicious dressing.
If you want to add an unexpected dash of spring color to your salad – try topping it with edible flowers. Honeysuckle, marigold, or pansies are all gorgeous on a salad.
